The Eleni & Edouard Vocoret domaine may be only a few vintages old, but already they are regarded as among the foremost artisan producers in Chablis. Bas de Chapelot comes from a small parcel of vines just below the Montée de Tonnerre Premier Cru. Unlike most modern Chablis, the wine is fermented with wild yeasts and sees some old oak (rather than just stainless steel). The result is a wonderful wine with weight and balance, plus the freshness and minerality so typical of the region.
