Cesar Florido is the master of Moscatel, the underrated, lesser-known Sherry grape variety. The Pasas bottling is made with hand-selected grapes that are sundried for three weeks to concentrate the sugars. The wine is aged in solera for up to nine years before bottling. The result is a deliciously sweet, complex sherry.
