Tim Wildman 2019 Piggy Pop Pét-Nat
Tim Wildman is a Pet-Nat specialist. If you're not up to speed on the style, it involves interrupting the wine's fermentation by bottling it. The fermentation then continues in bottle, producing a lightly sparkling drink. Piggy Pop is 100% Nero d'Avola grown in the Riverlands and bursting with cherry flavours with a hint of licquorice spice.
Fermentation begins in steel tank with 25% whole bunches. Ferments to dryness in bottle over the winter before release.
