Ben Walgate of Tillingham in East Sussex is going all-in, setting up a unique project which is not afraid to push boundaries. 'Col' is a reference to 'col fondo' (otherwise known as the 'ancestral method') of producing sparkling wine. This is the typical Pinot Noir, Chardonnay, Pinot Meunier blend, with the addition of Auxerrois. Fermented naturally, it is bottled with a small amount of additional sugar for continued fermentation in bottle, but left undisgorged. It is therefore slightly hazy, with soft, small bubbles and a gorgeous palate of baked apples backed up with wonderful freshness.
43% Pinot Noir, 29% Auxerrois, 22% Chardonnay, 6% Pinot Meunier. Second fermentation in bottle with wild yeast. Undisgorged.
