Col'18 is the result of the best vintage in the history of English wine, combined with the talents of the most exciting producer in the UK. Ben Walgate of Tillingham in East Sussex is going all-in, setting up a unique project which is not afraid to push boundaries. 'Col' is a reference to 'col fondo' (otherwise known as the 'ancestral method') of producing sparkling wine. This is the typical Pinot Noir, Chardonnay, Pinot Meunier blend, but fermented naturally with no sulphur additions, then bottled with a small amount of additional sugar for continued fermentation in bottle, but left undisgorged. It is therefore slightly hazy, with soft, small bubbles and a gorgeous palate of baked apples backed up with wonderful freshness. A genuine revelation that must be tried.
Fruit from local growers in Kent and East Sussex. Hand-harvested. Fermented with indigenous yeasts, 15% in third fill white Burgundy barrels. Second fermentation in bottle. Not disgogred (ancestral method). Unfined and unfiltered. No sulphur added.
