Thymiopoulos' most recent project high on the slopes of Mount Olympus has already produced one of the best new wines in Greece (Rapsani 'Terra Petra'). Now comes 'Karavas', a single vineyard bottling which is another step up. A blend of old vine Xinomavro, Krassato and Stavroto, this is an extraordinarily elegant, full-bodied red which is already delicious but has masses of ageing potential. Bright glowing ruby. Very rich and spicy. Masses of personality and finesse! Finishes with that nice polished minerally thing. Lots of life, and concentrated, well balanced flavour even though it is the epitome of a transparent wine. Very long.
