Ferdinando Principiano is based on the southern edge of the Barolo zone, and in 2003 switched from making wine fairly conventionally to fully embracing the natural wine ethos. The vineyards are farmed organically, the wines are fermented with wild yeasts and little if any sulphur is used. Dosset is 100% Dolcetto from Piedmont, but made in a decidedly fresh, easygoing style. Relatively low in alcohol, it is light, crisp and backed up by some good red and black fruit flavours.
Fermented with wild yeasts. Unfined, unfiltered.
