Peggy Buronfosse started her Jura estate with 0.4 hectares of Chardonnay in 2001. Farming is all organic and the vineyards are partly ploughed by horse. She makes several Chardonnays from different plots, all with a unique expression. Les Ammonites is a superb example, with richness and minerality in equal measure.
