
Pattes Loup Chablis Vent d’Ange 2018
In an area of Burgundy where herbicides and pesticides are still the norm, the vineyards of Thomas Pico (Domaine Pattes Loup), with their vines organically, individually tended and surrounded by wild plants, stand out. So do the wines. Thomas' work in the vineyards ensures they produce great fruit, and the focus on quality follows through to the winery. Fermentation and ageing take place in a variety of vessels including egg-shaped concrete, stainless steel and oak, and the wines are all aged far longer than the norm. These are some of the most exciting wiens in Chablis. Vent d'Ange comes from three vineyards: La Ménarde, Les Malantes and Pattes Loup (which gives the domaine its name). It is aged for eighteen months in a mix of stainless steel and concrete eggs. It is a precise, taut Chablis with great minerality, beautifully balanced.
