In an area of Burgundy where herbicides and pesticides are still the norm, the vineyards of Thomas Pico (Domaine Pattes Loup), with their vines organically, individually tended and surrounded by wild plants, stand out. So do the wines. Thomas' work in the vineyards ensures they produce great fruit, and the focus on quality follows through to the winery. Fermentation and ageing take place in a variety of vessels including egg-shaped concrete, stainless steel and oak, and the wines are all aged far longer than the norm. These are some of the most exciting wiens in Chablis. The 1er Cru Butteaux is aged for three years before being bottled unfined and unfiltered. It is amazingly complex, tense and balanced.
100% Chardonnay. Extended lees ageing. Minimal sulphur additions. Aged three years in a mix of steel and oak.
