Karavitakis' 'Indigenous Yeast' wines are made in tiny quantities from old, ungrafted vines. As the name suggests, the wine is fermented with wild yeasts and is generally not messed around with. The focus is on letting the wonderful old vine fruit show its quality. Just 1,000 bottles of the Liatiko are made, and it sees 9 months in used oak barrels. This has all the red berry flavours and natural spice of Liatiko. A superb example of the variety.
