Hatzidakis' Cuvée No. 15 is one of many experiments in Santorini Assyrtiko from the island's most restless producer. This particular wine is made from three vineyards which ripen relatively early. Hatzidakis' French wine importer encouraged him to make and bottle the wine separately. It's clearly worth it. Beautifully aromatic and restrained, it's a superbly elegant rendition of Assyrtiko.

From three ungrafted vineyards of partly (very) old vines where the grapes ripen relatively early.
Fermented in stainless steel and aged on its lees for around eight months. Bottled unfiltered.
Drinks well on release. Can be cellared for up to ten years.
