Unless you have had this wine before, you've probably never had anything like it. From a remote corner of north-west Greece, it is a semi-sparkling, semi-dry orange wine, made by blending the local white grape (Debina) with a small percentage of the red Vlahiko. The name 'Paleokerosio' means 'old-fashioned', and the style is a traditional one revived by the pioneering Lefteris Glinavos, with the help of researchers at the local university. To make it, the juice is first fermented with wild yeasts in oak casks, then the wine undergoes a second fermentation in sealed tanks to produce the sparkle. The aroma is a wild combination of orange and apricot, with a little sweetness balanced by subtle tannins and a gentle sparkle on the palate. Bottled in a 50cl flask and sealed with a crown cap, it is delicious, uniquely Greek, and great with food.
