Cotat is far from your typical Sancerre producer. He harvests late, and barrel-ferments the juice in old demi-muids using natural yeast. The wines are dense, complex and ageworthy. Cailllottes ticks all those typical Cotat boxes but is made from younger vines and designed to be more approachable than the wines further up the ladder. As such, it is a great introduction to one of the Loire Valley's great artisans.
Single vineyard of young(er) vines. Hand-harvested late. Barrel-fermented with indigenous yeasts in older demi-muids, then aged in larger tonneaux. Unfined and unfiltered.
