Filippi Soave Colli Scaligeri 'Castelcerino' 2021
Filippo Filippi's farm sits at the highest point in Soave, in a secluded spot surrounded by forest. He farms his 40 acres biodynamically, with most of the vines being trained along traditional pergolas and many dating back to the 1930s. For this wine, grapes from the Catelcerino vineyard are hand-harvested, and the wine fermented by wild yeasts in stainles steel. It is aged on its lees for an extended period and then bottled unfiltered. This is a beautiful Soave, with ripe apple flavours and a crisp, refreshing palate.
