Eric Texier is from Bordeaux and used to be a nuclear engineer. Not an obvious candidate to be making natural Côtes-du-Rhône, and yet here he is, a sort of godfather to the natural wine movement. Chat Fou ('crazy cat') is a light style of Côtes-du-Rhône made by fermenting white (15-20%) and red grapes together. 'Natural' means different things to different people, but this is the right side of the line - simply made, with a pure red berry flavour and a pleasant tang.
Mostly from Texier's St.Julien-en-St.Alban vineyard, with a small amount of the Grenache from another site. Fermented with native yeasts. No sulphur during winemaking, only a little at bottling. Aged for a year in concrete tanks.
