Envínate's Ribeira Sacra project (they also make wines in Tenerife and elsewhere) is the source of some of the best wines in this extraordinary Galician landscape. Made from old (60 years+) vines grown on very steep slate slopes, it is 90% Mencía with some other co-planted varieties blended in. Fermented with wild yeasts, aged in old oak and then bottled with minimal sulphur, it is wonderfully fresh and aromatic, with red cherry fruit flavours and a dose of peppery spice.
Foot-trodden, then fermented with wild yeasts. Aged in old oak for eight months. Unfined and unfiltered.
