The Eleni & Edouard Vocoret domaine may be only a few vintages old, but already they are regarded as among the foremost artisan producers in Chablis. En Boucheron comes from a vineyard located between the Premiers Crus of Montmains and Vaillonsu. Unlike most modern Chablis, the wine is fermented with wild yeasts and sees some old oak (rather than just stainless steel). The result is a wonderful wine with weight and balance, plus the freshness and minerality so typical of the region.
