Maestro Sierra's amazing Sherrys are made in very old barrels, moved using manual siphoning, settled by time, bottled unfiltered and unsulphured. They are the perfect illustration of just how undervalued Sherry is at the moment. The amount of work that goes into producing these beautiful wines is extraordinary. The Amontillado spends up to six years under flor, followed by a further ten years of oxidative ageing. It is very complex, nutty and dry.
