Edouardo Torres Acosta is originally from Tenerife, but first moved to Sicily in 2012 to work with Arianna Occhipinti. He's still there and now splits his time between working at Pasopisciaro and on his own project. He rents two hectares on Mount Etna, and vinifies his wine at Arianna's winery. Farming is organic. Versante Nord white is a blend of various native varieties from six different parcels on Etna's north slope. Fermented in concrete tank with five days of skin contact, it is a lively, fresh wine with a citrusy flavour.
