Edouardo Torres Acosta is originally from Tenerife, but first moved to Sicily in 2012 to work with Arianna Occhipinti. He's still there and now splits his time between working at Pasopisciaro and on his own project. He rents two hectares on Mount Etna, and vinifies his wine at Arianna's winery. Farming is organic. Versante Nord red is 80% Nerello Mascalese and 20% mixed native varieties from two plots on the north slope of Mount Etna. The vines are around fifty years old, and the resulting wine has a lovely cherry character with old vine complexity.
