Clairette Blanche was once planted all over South Africa, but this is one of the last (if not the last) vineyard remaining. Craven are reclaiming it and showing it can make a fascinating, fine wine. Flavour of pear, good freshness and a little grip, it's a finely balanced, moreish drink.
One component fermented in old neutral barrels. The other portion fermented in open top stainless steel tanks on the skins. All matured in old neutral barrels. Unfined and unfiltered. Minimal sulphur additions.
