Cesar Florido is the master of Moscatel, the underrated, lesser-known Sherry grape variety. This cream sherry is a blend of a dry Oloroso and sweet Moscatel. Whereas most cream sherry is made with the much darker and sweeter Pedro Ximemez, using Moscatel instead produces a wine that is more delicate and floral, yet still luscious and sweet.
