Can Sumoi 2019 Xarel-lo
Pepe Raventós didn't need to start making wine in his garage. After all, he is the latest generation of the family that invented Cava, and the Raventós i Blanc Cava brand remains wildly successful. But convinced that the local grape varietes could yield great still wine, he set up Can Sumoi. The project is now located in an old estate at 650m altitude in the Serra de l’Home mountain range. The 350 year old stone walls contain thirty hectares of old Montonega, Xarel-lo and Sumoll vines, all of which are farmed biodynamically. Like all the wines, the Xarel-lo is made with very little intevention in the winery, fermented with wild yeasts and with no sulphur additions. It is delicously brisk, full of ripe apple flavours and fresh acidity, beautifully balanced.
Fermented with indigenous yeasts in stainless steel. Unfined, unfiltered, no added sulphites.
