Ca' dei Zago's hand-crafted Prosecco has almost nothing in common with the ubiquitous commodity wine we’re all familiar with. The vines are farmed biodynamically and are old (around 50 years of age). Although most of them are the classic Glera variety, also included in the blend are Verdiso, Perera and Bianchetta. Unlike most Prosecco, which is referemented in bulk to make it fizz, this is bottled before the initial wild yeast fermentation has finished, and is then aged in bottle on its lees. The resulting wine is cloudy in appearance, much drier than your typical Prosecco, and with a gentle fizz (frizzante). A sophisticated, yet very refreshing, light, mineral wine which takes on even greater complexity with further bottle age.
