"But who are we to think we can do better than nature" says Alessandro Viola. Alessandro tends five hectares on Sicily's Mount Bonifato on the north coast, and his approach is very much about working naturally in the vineyard. He simply mows between rows and ploughs by hand around the vines – usually once or twice each season. The result is excellent fruit, and wines of great purity made simply. Note de Bianco is a hazy, fresh, easygoing wine made with the Grillo grape variety. Perfect for a summer afternoon.
