The problem with the wines of Valli Unite is you never know when more will appear. This commune in the Piedmont hills, founded in the 1970s by Ottavio Rube and two likeminded friends, is not the easiest place to get hold of. Like the red, Ottavio Rube Bianco is an unashamedly rustic, thirst-quenching natural wine. Somehow it seems most appropriate served in a tumbler, the perfect wine to wash down a hearty feast.
Grown by various members of the Valli Uniti co-op in north-west Piedmont. Natural winemaking, with minimal intervention, natural ferments, very little if any sulphur and no oak.
