Sous Voile means 'under a veil', and refers to a distinctive winemaking technique found in the Jura where the wine is aged in barrel, protected from the air by a layer of flor (yeast) that forms over the surface. This exceptional wine, made with fruit from 50 year old Chardonnay vines on Château Chalon's north slope, is a great example from Macle, one of the region's premier producers. Long, multi-layered and highly distinctive.
