Skouras 2019 Wild Ferment Assyrtiko
Assyrtiko has long been Greece's best (white) grape, producing wines of remarkable intensity and balance on its native Santorini. The rest of the country is waking up to its qualities and there is now some superb (and more affordable) Assyrtiko being made elsewhere. This wine by Skouras, one of the best modernist producers in the Peloponnese, is a beautiful example. Using grapes grown on the mountainside 620m above sea level it is fresh, aromatic and full of energy.
Gymno vineyards. Fermented in stainless steel and aged six months on lees.
