In the 1970s a farmer in the Piedmont hills, Ottavio Rube, joined forces with two likeminded friends and formed a co-operative, 'looking for a new way to continue to be an old-fashioned peasant in a modern world'. The commune has been organic since 1981, and now has 30 core members and 100 hectares of land. Ottavio Rube Rosso is an unashamedly rustic, thirst-quenching, natural wine. Serve lightly chilled, ideally in tumblers washing down an old-fashioned peasant feast.
