Valli Unite 2019 Ottavio Rube Bianco
In the 1970s a farmer in the Piedmont hills, Ottavio Rube, joined forces with two likeminded friends and formed a co-operative, 'looking for a new way to continue to be an old-fashioned peasant in a modern world'. The commune has been organic since 1981, and now has 30 core members and 100 hectares of land. Like the red, Ottavio Rube Bianco is an unashamedly rustic, thirst-quenching natural wine. Somehow it seems most appropriate served in a tumbler, the perfect wine to wash down a hearty feast.
Grown by various members of the Valli Uniti co-op in north-west Piedmont. Natural winemaking, with minimal intervention, natural ferments, very little if any sulphur and no oak.
