Maestro Sierra's amazing Sherrys are made in very old barrels, moved using manual siphoning, settled by time, bottled unfiltered and unsulphured. They are the perfect illustration of just how undervalued Sherry is at the moment. The amount of work that goes into producing these beautiful wines is extraordinary. The Fino spends four years in the solera system. It has a salty freshness and flavours of sour apple. Complex, yet at the same time delicate and fresh, it is the perfect aperitif.
Base wine fermented in stainless steel. Aged under flor. Spends 4 years in a solera of 500l American oak butts.
