Santorini isn't entirely about Assyrtiko, and for something different there's no better place to go than the endlessly experimental Hatzidakis. As well as red, white and dessert wines from little-known Greek grape varieties, there is this rosé made from 100% Mandilaria. Crafted the Hatzidakis way, from high quality fruit fermented with indigenous yeasts, it has a very appealing strawberry/floral character, run through with wonderful freshness and a salty tang. Superior rosé from one of Greece's best.
