Haridimos Hatzidakis was the ultimate artisan of Santorini wine, the man who showed that its vineyards with very old vines could produce distinctive, world-class wines. As well as his groundbreaking special bottlings, he made a more traditional Santorini blend with fruit from four different villages. Being Hatzidakis, the quality was still exceptional, and the wines capable of living for many years. The last remaining bottles are bargains that will not be seen again.

Fermentation with ambient yeasts, left on lees for 40 days. Aged in stainless steel, no oak.
Drinks well on release. Can be cellared for up to ten years.
